Processes of Tea
Tea is usually processed and made into a beverage within about an hour of picking. This simple method for processing tea is the same for black tea, white tea, and green tea. The processed tea is then aged, or oxidized, and steeped in hot water. The length of time it takes to be brewed and steeped depends on how the tea is processed.
Although tea, like coffee, is usually made from leaves of the same plant, the leaves are processed slightly differently. For one thing, tea leaves are picked after they are ripe, whereas coffee beans are picked before they are ripe. There is an interval between picking the leaves and when they are brewed and steamed. In most types of black tea, the leaves are picked by hand, sorted, and dried.
Depending on the type of tea, it may be steamed immediately after being picked. Steaming is a common method of processing tea in Asian countries. In China and some countries in Africa, such as Kenya, people pick leaves after the rainy season, when the plants have lush, green leaves. The green, unripe leaves are picked and have a very low amount of caffeine. However, the leaves are usually withered to make them dry, and then are roasted over fires. This process lowers the caffeine levels and changes the leaves from a green to a black color.
Although black and green teas are often called tea, they are processed in different ways. Green tea is simply unroasted tea leaves. Black tea is roasted tea leaves, often withered before roasting. White tea is made from unripe, tea leaves, which are withered before picking.
